Cinnamon Toffee Apple Muffins with a Goats’ Cheese Frosting
What you'll need
For Muffins:
250g plain flour
3 tsp baking powder
1/2 tsp salt
1 1/2 tsp mixed spice
110g while granulated sugar
1 egg
150ml milk
170g apple peeled cored and very finely chopped
85g melted butter
60g raising or chopped walnuts (optional)
For Topping:
250g Delamere Dairy plain goats’ cheese log
250g Delamere Dairy goats’ butter
400g Icing Sugar
Caramel drizzle
How to make it...
- Prepare muffin tins and preheat over to 200 degrees celcius.
- In a large bowl sieve together flour, baking power, salt and spice, stir in sugar
- In another bowl, beat egg with a fork, stir in milk, chopped apple and melted butter
- Pour all of wet mixture into dry. Stir just until combined. Add raisins/walnuts at the end.
- Spoon into muffin cups. Mixture should make 12 standard size muffins. Bake for 20-25 minutes until tops are lightly browned and springbuck when pressed gently.
- Allow muffins to cool and pipe the Delamere goats' cheese frosting generously on top. Drizzle with caramel sauce.
