What you need

Ingredients:

* 400 – 500g Macaroni pasta
* 30g Delamere Dairy’s Goat butter
* 400ml Delamere Dairy’s Goat milk
* 400g Medium ’s Goat cheese
* 200g Mature Delamere Dairy’s Goat cheese
* 150g Flour
* Sprinkling of breadcrumbs
* 1 tbsp Sage
* 2 tbsp Chives
* Salt and Pepper

What you do
Method:

1. Pre-heat the oven to 180°C. Boil macaroni as directed on packaging.

2. WHITE CHEESE SAUCE. Melt the butter & add the flour until a paste has been made, when the paste bubbles slightly (turn down/take off the heat) and add the milk very gradually, keep stirring throughout making sure the solution is blended smoothly. The sauce should thicken up into a custard type consistency.

3. Add the broken up Delamere Dairy Medium Goats Cheese into the sauce with the sage, chives, salt and pepper to taste. Stir until smooth or near smooth.

4. Place the pasta in a large baking tray, cover with the cheese sauce and mix in, then sprinkle the broken up Delamere Dairy Mature Goats Cheese, breadcrumbs and a drizzle of oil on top.

5. Bake for 25 – 30 minutes. Serve with fresh slices of tomatoes and salad leaves.
